BananaRama Sundae

This is a quick an easy dessert to make, although it does require a 24 hour or overnight freezing of bananas. Bananas have been rather expensive here since I came back. Most of Australia's bananas come from Queensland and due to the floods in January many of the crops were affected. I have started buying them again now that they are affordable. For a while I was just buying the odd one or two as a special treat.

If you have an ice-cream maker you could probably use un-frozen bananas, I don't have one, so I am not sure how you would do this. When freezing the bananas you can either peel them, peel and chop, or place them in your freezer whole. I usually just peel them and place them in a sealed container.

BananaRama Sundae

Soft serve banana ice cream with chocolate sauce and chopped bananas.

Serves 1 or 2















Equipment
: High-speed blender or juicer

2 frozen bananas
a few drops of vanilla (I used Certified Organic Vanilla extract)

Chocolate sauce (ice-magic)
1 tbsp raw cacao
1 tsp melted coconut oil
1 tsp raw honey (or agave, maple syrup, coconut sugar, rapapdura)

Banana Ice-cream:
Place bananas in blender and using a tamper, push bananas down. In a few moments, you will have a creamy banana mixture, to the consistency of soft serve ice-cream. Add vanilla, I used a few drops of vanilla but you could add more if you wanted more of a vanilla taste. Before removing the ice-cream from the blender I move it around with a spoon a little to check I haven't missed any chunks of banana. Using an ice-cream scoop, place on a pretty bowl and place bowl in freezer while you make chocolate sauce. If you wanted a harder ice-cream, spoon the mixture into a freeze-friendly container and remove once it has hardened to your liking.

Chocolate Sauce:
Place sealed coconut butter jar in a bowl of hot water to soften. If it is a very hot day you won't need to do this it will be coconut oil. In a bowl, add coconut oil and cacao and blend till smooth. Add honey or other sweetener till smooth. Pour chocolate sauce over ice-cream and place in freezer for a few minutes. Coconut butter hardens when cold, thus creating a chocolate coating over the ice-cream. It just adds a little dimension to this dessert. Of course, you might prefer a hot chocolate sauce, so skip this step if you want.

Serve with chopped bananas, and any other toppers. Enjoy :)

Raw mushie curry (sort of recipe)

The other day I wanted to make something yum for hub for lunch. He's working hard at the moment and wants to also be highly raw. I didn't write down details, so these are estimates but this is what I threw in the blender:

meat of a young Thai coconut
200g of mushrooms, marinated in tamari for a few minutes (set aside some of the mushies to garnish)
possibly about 300ml s of water but you would probably use coconut water
1sp curry powder
1 tbsp tamari or celtic sea salt
a pinch of fennel seeds

to garnish
2 or 3 spring onions
few springs of coriander
handful of sesame seeds

I think you could make this more Thai, if you had some chilli, lemongrass, galangal.

With raw soups you can heat them a little or use some hot water in place of coconut water.
