It has been a month and a half (28/08/10) since I presented at this course but I finally have photos so felt to do a little post about my experience.
The course was held at great venue, Wyee Community Hall. It was so nice to go into a kitchen that had a large fridge and a large freezer, and my mind ticked away at the possibility of having this for myself some day. And filling it with lots of yummies.
Introduction to healthy eating with raw foods was put together by Sophie Knox and Shirley Hotchkiss of Raw Coasties. So much work and preparation goes on behind the scenes and I don't think you realise how much until you are involved. I was originally invited to do a little raw chef type segment, particularly demonstrating a dehydrator. But I decided to expand and give it a little theme to show those new to raw foods that it can be tasty as well as gourmet enough to share with anyone. And mostly everyone loves italian food.
Italian Inspired Menu:
Antipasti
Garlic toast and “Hide the greens” pesto, garnished with cherry tomato
Primi Piatti
Zucchini spaghetti with Sundried Tomato sauce
Sauce: tomatoes, dry-packed sun-dried tomato, cold-pressed Australian extra-virgin olive oil *, thyme, red capsicum, Celtic Sea Salt
Dolce
Chocolate Avocado Pie
Coconut and Raspberry Gelato Cups
The program included the following:
- Why we need more raw food in our diet, Green smoothie demonstration, Simple, easy and delicious ways to add more nutritious raw food to your diet - composting, sprouts, local organic food sources, the healing power of greens, plus a talk by Raw Aussie Athlete Grant Campbell.
I only had a half-an-hour to demonstrate this food, so I just focussed on the pasta dish as it was the easiest to create in a short amount of time. I would definitely be willing to do a demo and perhaps teach in the future. It was nice to see that people enjoyed the food that I made, they of course liked the chocolate pie the best.
